Chicken Sausage and Broccoli Orzo
Ingredients
2 cups of orzo pasta
1 pound of chicken sausage, sliced
2 cups of broccoli florets
1 tbsp. of olive oil
3 cloves garlic, minced
4 cups of chicken broth
1 tsp. Italian seasoning
Salt and pepper to taste
1/2 cup grated parmesan cheese
Instructions
In a large pot, heat olive oil over medium heat. Add sliced chicken sausage and cook until browned, about 5-7 minutes.
Add minced garlic and cook for an additional 1 minute until fragrant.
Stir in broccoli florets and cook for 2-3 minutes until they start to soften.
Add orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then simmer covered for about 10-12 minutes until orzo is tender.
Remove from heat and stir in grated Parmesan cheese until melted. Serve hot, garnished with fresh parsley.
